Stainless steel has a bigger percentage of nickel and crome in its composition and therefore, more resistant to oxidation. Contrary to carbon steel which needs a higher degree of maintenance.

What’s Damascus Steel?

Damascus Steel, one of the most famous steels of the pre-industrial era, it’s the result welding two or more types of steel in repteaded or overlapped layers which can range from 30 to 600 layers. Depending on the number of repetitions in the welding process the result is a beautiful pattern combined with a strong and durable blade.

How to keep carbon steel blades?

Dry well each time after using and then apply adequate oil (non-toxic) such as olive oil, camellia oil or ballistol.

What should I use to sharpen my knife with?

There are many ways of sharpening but my recommendation is to use a honing rod or whetstone (grain higher than 800).

Which types of wood do you use the most?

I use national and exotic woods. My favourites being within portuguese natives: holm oak, olive, walnut and boxwood. Non-natives: ebony, rosewood, takula and wenge.
